This is my second iteration of jerky (my first was here, where I learned some pointers and “what to do next time”). This time, I went more in-depth with the marinade, going on a whim with a few ingredients to see how it turns out, as well as letting it marinade overnight. I also got a smoker for my birthday: I decided to go electrical so I could control the heat more precisely. After I put it all together though, it only has two settings: plug and unplug. It still does the wood though. In fact, I changed it up from Mesquite to Hickory for the iteration. Granted I’m a little behind the power curve (just getting back from a short TDY and still moving in with odds and ends), but this iteration of venison jerky will be in the mail on Monday and should reach the judging committee for the “Jerk-Off” competition no later than the SuperBowl.

Snakeye Jerky

So far, I’ve already received samples from Skaterat, Astro, and Dan from Madison. So now, it’s just me and JohnnyJ that need to turn in the product for review (though I think JohnnyJ said he already had his in the mail). When I get all samples, Pam and I will taste them and rank order them once the both of us agrees on the order. I’ll post our tastes and comments here, as well as in an email to Astro, the inaugural year’s host of the competition.

Anyhow, Astro, if it’s OK with you, I’d like to add one more judge (of whom I am sending out all jerky that I have so far: Dan’s, Skate’s, mine, and yours) for judging to make it fair and impartial: John the Irishman; even though he didn’t make any, he is a connoisseur of food and can judge impartially, I’d like it if we could at least cast his vote for half points or something, I think it’d make it more fair (however, it’s in the mail regardless)…

Also, my apologies for the lack of flare… I didn’t include anything with the jerky. But good jerky is good jerky… you may not need the flare…

UPDATE: Apparently it doesn’t pay to procrastinate… It cost about $75 to get it all shipped out and arriving before the SuperBowl.
